Cook your raw chicken breasts with salt and pepper to taste. You can do this in the pressure cooker for 8 minutes. Just be sure to add a cup of water or chicken broth if cooking it this way.Alternatively, you can also boil the chicken in a pot of water. Just make sure the chicken is completely covered with water. Bright to a boil, then salt and pepper to taste once you drain the water. Use a stand alone mixer with the paddle attachment to shred the chicken.
Add in the mayonnaise, craisins, and chopped apple. Stir until combined.
Salt and pepper to taste.
Spread desired amount onto the preferred sandwich bread and add lettuce.
