This delicious filet mignon with melted cowboy steak butter is easy to make and will be the perfect addition to your Valentine’s Day dinner at home. We like to serve this with oven-baked broccollini baked and a baked potato.
It is paleo friendly, gluten free, and pregnancy friendly (make sure blue cheese is pasteurized).
Valentine’s Day Filet Mignon with Melted Cowboy Steak Butter
Equipment
- barbecue
Ingredients
- 4 filets
- 1/4 tsp garlic powder
- 1 tbsp barbecue seasoning
- salt and pepper to taste
- blue cheese crumbles to taste
Cowboy Steak Butter
- 1 stick butter unsalted
- 1 tsp fresh minced garlic
- 1 tbsp dried chives
- salt and pepper to taste
Instructions
- Bring filets to room temp.
- Season each side with garlic powder, barbecue powder, salt, and pepper then rub into meat.
- Heat barbecue up to 400-450 degrees and sear filets approximately 3-4 minutes per side.
- Turn down heat to 350 degrees and cook for another 3-4 minutes or to your desired temperature.
- Top with cowboy steak butter and blue cheese crumbles.
- Remove from barbecue and rest for 5 minutes before cutting the steaks.
Cowboy Steak Butter
- Let butter reach room temperature.
- Combine butter, fresh minced garlic, and dried chives together. Add salt and pepper to taste.
- Place in cellophane and form into a log shape. Slice into coin shapes when ready. (This can be prepared the night before or the morning of and placed in the fridge until ready)
