Ingredients Needed for Crème Brûlée:
Cream Mixture
- 2 cups heavy cream
- 1/4 cup granulated sugar
- 1 bunch fresh thyme
- 1 orange peel
- 1/8 tsp freshly squeezed orange juice
- 1-2 cinnamon sticks
- 2 vanilla beans (opened and scraped into the cream mixture)
Custard Mixture
- 3 egg yokes
- 1 tsp vanilla
- 2 tbs sugar
Topping
- 1/4 inch sugar dusting
Supplies Needed for Crème Brûlée:
- medium pot
- Strainer
- orange peeler
- scissors (if using vanilla sticks)
- small ramekin bowls
- casserole dish
- torch lighter
Instructions:
Step 1: Infuse the Cream Mixture
Heat up cream on stove in a sauce pan on medium heat.
Add in the fresh thyme after crushing the leaves in your hand to bring out the flavor.
Next, add in the orange peel.(I like to use a potato peeler to make 3 large strips. Also, try to get only the orange skin).
Add in 1/4 cup sugar to mixture and bring to a boil.
Stir constantly so it doesn’t scorch.
After it boils for 2 minutes, pour the crème through a strainer to get all the large ingredients out of it so you’re left with only the crème.
Place in the refrigerator to cool completely (about 15-20 minutes).
Step 2: Make the Custard Mixture
While the infused crème is cooling, whisk together 3 egg yolks, sugar, and vanilla in a separate bowl.
When the crème is completely cooled, combine with the egg mixture and whisk completely.(It’s vital the crème is cooled, otherwise it will turn to scrambled eggs if it’s still warm)
Step 3: Prepare the Water Bath
Fill up 4 mini ramekin dishes with custard, and place them into a casserole baking dish. The the casserole dish with water that reaches half way up the ramekins (this ensures even cooking).
Step 4: Bake the Custard
Place into a 325 degree oven for 35 minutes.
Check to make sure the custard has formed and is not soupy in the middle. Add more time as needed.
Step 5: Cool the Custard
Place ramekins into refrigerator for 1-2 hours to completely cool and form.
Step 6: Caramelize the Sugar
Then right before serving, dust the tops with 1/4 inch layer of sugar and burn it with a torch to create the hard crack on top.
Serve immediately to your guests.
