These easy breakfast burritos are the perfect meal prep recipe for busy mornings. They’re protein-packed, easily customizable, and freezer friendly. You really can’t go wrong with these!
Often, I need a fast but protein packed breakfast for my grandkids or for my husband to grab before work. It’s very important to give kids a good healthy breakfast either before school or on busy Saturday mornings before sporting events. These burritos are our go-to.
Additionally, this recipe is easily customizable. You can change up the different kinds of meat (bacon, sausage, chorizo, turkey bacon, or even leftover steak), hash browns (grated or cubed), and your favorite shredded cheese.
However, the best part about these burritos is they are freezer friendly. Double or triple the recipe and, for not much more effort, you have several burritos for the weeks to come. I like to store several in the fridge for the week and freeze the remainder.
When it’s time to cook, simply remove the burrito from the freezer bag and microwave in the parchment paper for 1 minute if unfrozen. If frozen, cook for 1 minute per side for a total of 2 minutes. And that’s it!
In a nutshell, these burritos really are ideal for when you need a quick and easy breakfast.
Ingredients needed for Breakfast Burritos:
- eggs
- milk
- salt & pepper (to taste)
- barbecue spice (optional, but gives the scrambled eggs a little more flavor)
- olive oil (extra virgin)
- frozen hash browns
- ready cooked bacon (or meat of choice)
- large flour tortillas
- shredded cheddar cheese
Supplies needed:
- Parchment paper
- Quart sized freezer bags
How to make Breakfast Burritos:
Mix all the eggs, milk, barbecue spice, salt, and pepper in a bowl. Adding the barbecue spice is optional, but I find it adds a more flavor and is a tasty surprise. Scramble the eggs in a frying pan on the stove until fully cooked. Transfer scrambled eggs into a separate bowl.
Add 1 tbsp of olive oil to a frying pan and cook hash browns according to label instructions. Make sure to add salt and pepper to taste.
Microwave ready-cooked bacon according to label instructions and chop up in small pieces.
Lay out all ingredients in an assembly line arrangement to put together.
Begin assembling the burritos. First, scoop scrambled eggs onto a flour tortilla. Be careful not to overfill. Next, add the cooked hash browns on top of the eggs, followed by chopped bacon, and shredded cheese.
Tightly roll the burrito up and wrap in parchment paper. Package burritos individually in quart sized freezer bags.
Store the week’s burritos in the refrigerator and freeze any others for the following week.
When ready to eat, remove the burrito from the freezer bag and leave the parchment paper on. Microwave for 1 minute. If frozen, microwave for 2 minutes, turning halfway through.
