We’re kicking off the first day of Spring with these chicken salad sandwiches. They are a spin on your classic chicken salad recipe and are a staple in our family recipe book. It’s one of those recipes we make over and over. So, so good.
Enjoy this recipe for all the things, including brunches, bridal showers, baby showers, tea parties, camping trips, or even on hikes. Likewise, this recipe is especially great for when you need a quick lunch at home for the family because it can be ready in 15 minutes or less!

The mixture can prepared the night before or the morning of and kept in the refrigerator until ready to scoop onto the bread.
I often like to switch up the different breads I use to keep it interesting. I have found that wheat bread and really good quality seeded breads are my favorite though.
Sometimes; however, I skip the bread altogether and opt to scoop the chicken mixture with a cracker. This is a great option if you have gluten allergies. There are some really good gluten free crackers nowadays, but I have found that my favorite is Crunchmaster’s Multi-Seed Gluten-Free Cracker.

Ingredients Needed Chicken Salad Sandwiches
- raw chicken breasts
- apple
- craisins
- mayonnaise
- green leaf lettuce
- whole wheat bread or a really good quality seeded bread
- salt and pepper
Supplies Needed for Chicken Salad Sandwiches:
- Pressure cooker or pot (depending on how you cook the chicken)
- Stand mixer with paddle attachment
Instructions for Chicken Salad Sandwiches:
Cook your raw chicken breasts.
You can use either the pressure cooker or boil in a pot of water, depending on your preference and available time.
If using the pressure cooker, add salt and pepper to the chicken and a cup of water or chicken broth to the pot. Cook for 8 minutes.
You can also boil the chicken in a pot of water on the stovetop. Just make sure the chicken is completely covered with water. Bring the water to a boil then salt and pepper to taste once you drain the water.
Use a stand alone mixer with the paddle attachment to shred the chicken. Two forks works too.
Add the mayonnaise, craisins, and chopped apple to the bowl.
Salt and pepper to taste at this point.
Spread the desired amount onto the preferred sandwich bread and top with lettuce.
You can also skip the bread and scoop it up with your favorite crackers.
Serve with a side of fruit and chips. Enjoy!

- 2-3 chicken breasts (~2lbs)
- 1 apple (I prefer honeycrisp, but any will work)
- 1/4 cup craisins
- 1 cup mayonnaise (or more to taste)
- 1 head green leaf lettuce
- 12 slices wheat bread or a really good quality seeded bread
- salt and pepper (to taste)
Instructions
- Cook your raw chicken breasts with salt and pepper to taste. You can do this in the pressure cooker for 8 minutes.
